Overview:
The Certified Dietary Manager (CDM) at Legacy at Herington is responsible for overseeing and managing all aspects of foodservice operations in compliance with federal, state, and local regulations. The CDM ensures that meals served to residents are nutritious, prepared according to dietitian-prescribed guidelines, and meet the dietary needs of each individual. The CDM will work closely with the clinical and kitchen teams to maintain high standards of food quality, safety, sanitation, and resident satisfaction.
Duties and Responsibilities:
- Supervise and Manage Foodservice Operations:
- Oversee day-to-day operations of the dietary department, ensuring proper food handling, storage, and preparation according to food safety and sanitation standards.
- Develop, plan, and implement meal menus that meet the nutritional and dietary needs of residents, under the guidance of a registered dietitian (RD).
- Ensure all meals are served on time and in the correct portion sizes and dietary restrictions.
- Manage food inventory, ordering, and ensure that the kitchen is well-stocked with necessary ingredients and supplies.
- Staff Management and Training:
- Hire, train, and supervise dietary staff, including cooks, servers, and dishwashers.
- Schedule staff shifts to ensure proper coverage and adherence to labor guidelines.
- Provide ongoing training to staff on food safety, sanitation, and proper food handling techniques.
- Evaluate employee performance and provide feedback for improvement.
- Compliance and Quality Control:
- Ensure all food preparation and handling complies with local and state food safety regulations (Kansas Department of Health & Environment, KDHE) and the Centers for Medicare and Medicaid Services (CMS).
- Maintain records related to food temperatures, sanitation checks, and other regulatory compliance documents.
- Monitor food quality and ensure meals meet the dietary needs of residents, including special diets and therapeutic menus (e.g., diabetic, low-sodium).
- Resident Interaction and Nutritional Support:
- Work closely with residents, families, and healthcare providers to assess nutritional needs and dietary preferences.
- Modify meal plans based on individual needs and medical conditions, in consultation with the dietitian.
- Coordinate with other healthcare team members to support residents’ overall health and wellness.
- Budgeting and Financial Management:
- Oversee foodservice budget, controlling food costs and minimizing waste.
- Prepare cost reports and submit budgets to management for approval.
- Health and Safety:
- Ensure all dietary operations adhere to health and safety regulations, including maintaining cleanliness in all foodservice areas.
- Monitor the cleanliness and condition of kitchen equipment.
Qualifications/Requirements:
- Education:
- High School diploma or equivalent required.
- Associate's or Bachelor's degree in Food Service Management, Dietetics, or a related field preferred.
- Certification:
- Certified Dietary Manager (CDM) credential from the Certification Board for Dietary Managers (CBDM).
- Current certification as a food safety manager.
- Experience:
- At least 2 years of experience in foodservice management or in a dietary setting, preferably in a healthcare or long-term care facility.
- Knowledge:
- Strong knowledge of dietary management, nutrition, food safety standards, and therapeutic diets.
- Familiarity with local, state, and federal regulations regarding food service and dietary care, particularly in long-term care settings.
- Skills:
- Excellent leadership, organizational, and communication skills.
- Ability to work in a fast-paced environment and manage multiple tasks effectively.
- Knowledge of budgeting, cost control, and inventory management in a foodservice setting.
- Ability to use dietary management software and related systems.
- Licenses:
- Must meet the state's requirements for certification and maintain licensure.
Physical Requirements:
- Ability to stand and walk for extended periods (up to 8 hours per shift).
- Must be able to lift up to 40 pounds without assistance.
- Frequent bending, reaching, and crouching in the kitchen.
- Ability to use kitchen equipment safely (e.g., stoves, ovens, dishwashers).
- Good vision and hearing for inspecting food and monitoring kitchen staff.
- Ability to work in a hot and noisy kitchen environment.
- Capable of handling occasional stress in a fast-paced setting.
